A new study has found vitamin A-biofortified orange maize (corn) helps improve the night vision of children.
Researchers reportedly studied children ages 4 to 8 in rural Zambia who were marginally vitamin A deficient, and found those who ate orange maize showed improved night vision within six months. The researchers reported the children's eyes adapted better in the dark and their ability to engage in day-to-day activities under dim light also improved.
The study was recently published in The Journal of Nutrition.
